Cheddar and Chive Crackers

1 cup all-purpose flour
1⁄2 cup oat bran
1⁄4 cup freeze-dried chopped chives
1⁄2 teaspoon salt
1⁄4 cup cold butter or margarine, cut in small pieces
4 ounces sharp Cheddar cheese, finely shredded (1 2/3 loosely
packed cups) Low fat cheese can be used.
Yolk from 1 large egg (or 2 tablespoons egg substitute)
2-3 tablespoons cold water (more may be needed)

Heat oven to 375 degrees.
Mix flour, bran, chives and salt in a medium size bowl. Cut in butter withpastry blender or 2 knives until mixture resembles coarse crumbs.
Add cheese; cut in until mixture resembles fine crumbs.
Stir in yolk and 2 tablespoons of water until well moistened (use more water if dough is too dry).
Gather dough into a ball; flatten to a 1-inch thick round.
On a lightly floured surface, roll out dough to 1/8-inch thickness.
Cut in desired shapes with cookie cutter.
Reroll scraps.
Place crackers 1⁄2 inch apart on prepared cookie sheets.
Bake 14 to 16 minutes until edges are just starting to brown and bottoms are golden.
Remove to wire rack to cool. Makes about 75 two-inch or 38 four-inch.
